Tagliatelle – winter black truffle, sage butter, reggiano

Cavatelli – pork sugo, guanciale, tomato, chili, rosemary, Pecorino Romano

Spaghetti – Dungeness crab, Calabrian chili, caper, mint, pangrattato

3rd Course (select one)

Brosato al Borolo – beef short rib, parsnip, baby carrot, Tokyo turnip crudo, red wine jus

Risotto – foraged mushroom, dandelion greens, vin santo, Stracciatella, erbe fini

Frutti di Mare – sea scallop, seared prawn, mussel, saffron crema, haricot vert, Yukon gold potato, squid ink vinagrette
